Mango Berry Antioxidant Smoothie
Denise Vasi
Smoothies are a quick and easy go-to when there’s no time for breakfast and they also make a great snack for the little ones. This simple smoothie recipe will be a favorite because the ingredients are accessible enough to always have on hand. Using frozen fruits and veggies simplifies the whole smoothie-making process but consistency can change depending on your preferred protein powder, so if you need to thin out your smoothie simply add an ice cube or two or slowly add an extra bit of coconut water.
If you’re looking to amp this smoothie up, try adding Amazing Grass’ “Green Superfood” powder, linked here. Not only is this a quality product that offers a great dose of greens but it’s also affordable! FYI it will make your smoothie a little darker in color. Don’t be scurred!
Serving: 2 glasses
- 1 1/2 cup coconut water
- 1/2 cup mango
- 1/2 cup frozen raspberries
- 1/2 cup frozen blueberries
- 1 cup frozen spinach
- 1 pitted date
- 1 heaping tbsp almond butter
- 1 serving your preferred plant-based protein powder
- 1 tbsp coconut oil
- 1 tbsp chia seeds
- 1 scoop Amazing Grass "Green Superfood" powder (optional)
Like any other smoothie, just remember to add your ingredients in the right order.
Step 1:
Add the coconut water first. It should be an organic unsweetened kind. Be sure to check that it’s not from concentrate.
Step 2:
Add in mango, blueberries, raspberries, spinach, date and almond butter. Use organic berries, wild when possible and raw almond butter that is not salted or roasted.
Step 3:
After blending, add in your preferred protein powder and the Amazing Greens powder, if using, and blend.
Step 4:
While the ingredients are blending, slowly pour the coconut oil through the opening at the top of the blender. After blending thoroughly, add the chia seeds and blend for another 30 seconds or so.
Step 5:
Blend together until smooth.
Step 6:
Pour into a glass and serve fresh.
