Mango Black Bean Salad

Fiber is quite possibly the unsexiest topic to talk about in nutrition. We all know what fiber does (ahem), but did you know it’s also an important nutrient for healthy skin? It’s true! By keeping things moving, fiber supports your body’s natural detoxification processes. In addition, fiber helps your body absorb more of the antioxidants in your foods.

In this recipe, fiber-rich black beans are paired with mango, an antioxidant superstar that’s packed with vitamin C, which supports collagen production. Eat it as-is, or use it as a filling for lettuce wraps for a simple work lunch option.

  • 1-15 oz. can black beans, thoroughly rinsed
  • 1 mango, diced
  • 1 jalapeno pepper, minced
  • 1 medium zucchini, quartered lengthwise & thinly sliced
  • 1/4 c. coarsely chopped cilantro
  • 1 tbsp. olive oil
  • juice from 1 lime
  • salt and pepper to taste

Combine all of the ingredients in a large bowl, then serve.
